White Chicken Chili

White Chicken Chili is my kid’s favorite soup.

The mild flavors in this White Chicken Chili are subtle, surprising and delicious. Not only is The White Chicken Chili delicious, but it’s super quick and easy to make! The best of both worlds.

I’ve been cooking White Chicken Chili Soup since the kids were little- so it is a little sentimental to me. I can still see them sitting in their pjs and blowing on the soup to cool it.

This soup is still a staple in my house for the cold weather months. . .  it is soooo yummy!

One of my dearest friends, Deborah, gave me this recipe. Over the years, I’ve made a few healthy modifications. The herbs and seasonings, like basil and ground cloves, give it a surprisingly subtle but bright taste.

**Optional toppings can include shredded cheese, Greek yogurt or sour cream, green onions, bacon, red onions, and even jalapenos- if you can handle it .🤷🏻‍♀️

I knew this White Chicken Chili would be the perfect option for a milder chili option… Not everyone enjoys their mouth on fire and stomach ready to erupt from the bold and spicy chilis, seasonings and spices.

Easy White Chicken Chili

  • 2 tablespoons olive oil (extra virgin)
  • 1 onion (chopped)
  • 2-3 garlic cloves (minced)
  • 4 cups chicken (shredded)
  • 3 cups chicken broth
  • 2 tablespoons cilantro (chopped (fresh prefered) )
  • 1 tablespoon basil (chopped (fresh preferred))
  • 2 teaspoons chili powder
  • 1/4 teaspoon ground cloves
  • 2 cans great northern beans
  • 1 4.5 ounces can green chilis
  1. Heat olive oil into a pan, saute chopped onions and minced garlic until translucent.

  2. Add the chicken broth and stir well. Add all the remaining ingredients and stir well.

  3.  Simmer for 30 minutes, stirring occasionally. Check for seasonings and adjust.

PS Cute story- my son, Kade, who is 20 years old at the time of this blog, still only likes the chicken shredded in the White Chicken Chili! If I add diced chicken to the soup instead of the shredded chicken he politely declines.
