1 cup of unsweetened coconut
½ cup of sliced almonds
¼ cup of chopped pecans
1 cup of almond flour
1 TBSP of coconut flour
1 tsp aluminum-free baking powder
1 tsp of cinnamon
½ tsp of salt
½ cup of butter (room temperature)
½ cup plus 2 TBSP of Swerve Sweetener
2 medium size eggs
1 tsp of vanilla
½ cup of Lily’s chocolate chips (or sugar free, stevia sweetened chocolate chips)
  1. Preheat oven to 325 degrees. Line a cookie sheet with parchment paper

  2. Dry Ingredients: Combine the coconut flakes, almonds, pecans in food processor, and process/pulse until mixture resembles oatmeal. Add almond flour, coconut flour, baking powder, cinnamon, and salt and pulse a few times to blend.

  3. In a large bowl or mixer, beat butter and sweetener until creamy. Add eggs and vanilla extract and then the dry ingredients. Add the chocolate chips last.

  4. Form the cookie dough into balls into 1” diameter and place on lined cookie sheet. Press the center of the cookie dough down to about 1/2” thickness.

  5. Bake for 15-18 minutes, until barely golden brown. Let cool on the cookie sheet.
